Vegetarian Scotch Eggs
Ingredients
Makes 4
- For the Filling
- 1 Onion – Finely Diced
- 2 Carrots – Grated
- 2 tsp Dried Sage
- 2 tsp Dried Thyme
- 100g Dried Brown Lentils
- 125g Chopped Walnuts
- 100g Breadcrumbs
- 100g Grated Cheddar
- 1 Egg – Beaten
- 4 Soft Boiled Eggs
- For the Crust
- 200g Breadcrumbs
- 100g Plain Flour
- 1 Egg – Beaten
Method
- Fry the Onion, Carrot and Dried Herbs the vegetables begin to soften. Add the Brown Lentils and add a little water at a time to cook through the vegetables and lentils.
- Once the lentils are softened, add the chopped walnuts, breadcrumbs and the cheddar. Gradually add the beaten egg to bind the mixture.
- Portion the mixture into 4, flatten the mixture into the palm of your hand and place the soft boiled egg in the middle. Mould the mixture around the egg, making sure there are no gaps.
- Place the covered egg into the flour, then the beaten egg, then the breadcrumbs ensuring that it is well covered at each stage.
- Deep fry until the breadcrumbs are golden brown.

The Lentils that were used in the recipe were Dried Brown Lentils
