Lemon and Chia Seed Muffins with Honey and Lemon Cream Cheese Frosting
Ingredients
Makes 12 Muffins
- Dry Ingredients
- 250g Organic Spelt flour
- 2 Tsp Baking Powder
- 3 Tbsp Organic Chia Seeds
- 100g Organic Raw Cane Sugar
- Zest of 2 Organic Lemons
- Wet Ingredients
- 4 Tbsp Organic Plain Yoghurt
- 3 Organic Eggs
- 100g Organic Butter – Melted
- 50 ml Milk
- For the Frosting
- 50g Organic Butter – Softened
- 100g Cream Cheese
- 250g Organic Icing Sugar
- Juice of ½ Lemon
- 2 Tbsp Organic Honey
Method
- Firstly, place all of the dry ingredients into a bowl and ensure all of the ingredients are mixed together thoroughly
- Place all of the wet ingredients into a jug, give it a good whisk and fold into the dry mixture
- Place the muffin mix into muffin cases and bake on 180c/Gas 4 for 20-25 minutes or until golden brown
- While the muffins are baking, whisk together the softened butter and icing sugar until a smooth paste is formed. Add the cream cheese, lemon juice and honey, whisk for a further 2 minutes until it resembles frosting and place into the fridge to harden until the muffins are cool enough
- Once cooled, spread the frosting onto the muffins and decorate with a sprinkle of Chia seeds
